Winter is coming

So I returned from Spain this week and the seasons have definitely turned, calling for a bit of comfort food and something a little more filling than the simple salads and light breakfasts.

Although this chicken, asparagus and pea risotto has wine in it, it's a gluten free and dairy free recipe, full of energy. I was coming down with a cold so needed to keep my energy levels up whilst cycling to clients and this was so tasty!!

As the colder seasons come by, I lose interest in salads and I turn to food that is warm and fills me up! This second recipe was such a simple but healthy meal! Oven roasted courgette, aubergine, peppers and cherry tomatoes, seasoned with salt, pepper and olive oil. Salmon cooked in foil seasoned with soy sauce, garlic, ginger, salt and pepper, for lean protein. Ready to eat quinoa for a healthy carb that has higher protein levels than pasta and rice.
